our mallow tree is still producing flowers but the torts are no longer interested in them which is what I believe to be another example of plants changing chemically. One that they are interested in in winter more than summer is Thrift (Armeria). It doesn't really do any growing in winter but doesn't die off and they eat it. Lots of varieties of Campanula don't die off in winter either and mine are still flowering. Cat's ear and plantain still available too

Have you had a stool sample checked for parasites? Also some sort of probiotic may possibly sort the problem out.
