Default Favourite foods? Particularly in Winter!

I'm over-wintering my babies (due to their age, very recent arrival with me, and the fact they are my first tortoises) and although I am trying to grow some weeds and flowers from seed, I was wondering what else people do when choices of weeds and wildflowers outside are sparse?

There are loads of dandelions around and my two LOVE them but I am trying to feed them a wide variety of food. I'm giving them the odd bit of lettuce (NOT iceberg), some raddicio which they like, and have tried them on a number of different flowers (evening primrose, rose, harebell, geranium, petunia, marigold) and they're not interested in any! I've not run out of things currently growing in my garden so am trying to think of what else I could get hold of.

What about a suitable pellet feed for Hermanns? If I feed this to supplement their weeds during the Winter, how easy will it be to wean them off it in Spring / Summer (as I don't really want to rely on pellet food year round)?

First i could answer the pellet question, i feed a Tortoise pellet about twice a week as a part of the weekly diet, don't have to (may do in mid winter) but believe this to be a better way to keep them healthy (opinion). There is no addiction here maybe not feeding enough of them , if i feed plant's for a fortnight and take away the pellet diet they don't mind, if i feed three to four day's comercial diet for a fortnight the Tortoises revert back to a weed/grasses diet, (have tried this). I think it may be due, maybe not to feeding plant's only on that day, pellet meal only on that day for Herman's. Leopards the same but go out and graze also.
Have to add i also use Pre Alpin as a mix, every thing is moderated to an extent.
Other winter food's apart from home grown weed's/plant's could be if the winter is kind, safe wild weed's in sheltered area's, mixed salad bag's like Med mix, Italian mix, squashes, small amount's of veg if not feeding a Tortoise pellet.

mine also get pellets and greenery and again once they've had enough of the pellets will move over to the greenery, and again don't seem to mind on the days there's no pellets, they just eat the greenery.
