woodchips/coco coir

Hi, I am new on this forum.

We bought a Hermann for out family yesterday, we was provided with a starter set up - housing, water/food bowl, hide out log thing, UV light, heat bulb and some woodchips.
I'v been researching tortoise's for the past month, and seen people mention soil/coco coir/sand and like anything else there is alot of mixed feelings about things. Altho I do know you shouldn't use sand due too it being able too get into the eye's

so my question tonight is what do you use in your tortoise housing?

I have a huge sack of wood chips, but would be happy too swop too something else if it means my tortie will benefit from the switch also how deep should I make it?
