Not difficult at all... hold it upside down... it tries to right itself... take off the head...

If you have held a live soft shell turtle, at correct body temperature, you very quickly learn that decapitation is extremely difficult too do. In practice, much more likely is just a brutal envisceration. In addition too this, there is evidence of chilled freshly killed turtles sold, "poly wrapped" on the chill counters, again with "Head on".
